Spinach 1 Bunch
Onion 1 Medium
Tomato 1
Cucumber 1
Curd 3-4 Tsp
Oil 1 Tsp
Salt to taste
Peanuts
Lemon 1/2

Method

Wash and shred the spinach. Chop Onion. Dice tomato and Cucumber.
Roast and roughly grind peanuts.
In a pan take oil put onion and saute till transparent. Add spinach and salt and mix. Add little water and cover to cook. Once spinach is soft drain and refresh in cold water.
Now in a bowl take spinach add lemon curd tomato and cucumber. Adjust salt.
Top with peanuts and serve chilled.

Always place a rack in the bottom of the roasting pan, so the meat or poultry doesn't sit in its own fat drippings. And be sure to roast at a low temperature, about 350 F, to avoid searing the meat or poultry and sealing in the fat.
